Lucy Clark joins us in the studio today to share her Rainbow Cup Cake recipe..
These are fabulously easy to make and really add the 'WOW' factor to any party. Especially popular with children, you can adapt colours to suit a theme or favourites.
Using Lucy's classic vanilla cup cake recipe, which you can find on her website, split the mixture into as many bowls as you want colours. Lucy recommends using colour paste rather than liquid. Then divide your coloured mixtures equally between cases and bake for approximately 20 minutes at 160 (for fan ovens).
For the rainbow coloured icing, simply layer the different colours in your piping bag and start decorating!
