My motto has always been ‘never trust a skinny cook!' I do like to share recipes that I know work for me. They are not necessarily of my invention – but I will always give you the origin and maybe the story behind them! These recipes are relatively easy to make – hence the title, Faff-Free Cooking.
So today’s treat is – Cheese & Chorizo Puffs
60g grated cheese – cheddar or mozzarella
150g chorizo, chopped
320g ready-rolled puff pastry
1 egg - beaten
Paprika for dusting
1. Preheat the oven to 200C/Gas 6. Line a baking tray with baking parchment.
2. With a 4 inch round pastry cutter, cut as many rounds as you can from the sheet of ready-rolled puff pastry.
3. Put the cheese and chorizo in a bowl and mix well.
4. Place a heaped teaspoon of the cheese and chorizo mix in the centre of the pastry round and fold in half sealing the edges together well.
