Faff-Free Cooking with Jackie Johnson – Banana and Blueberry Muffins

My motto has always been ‘never trust a skinny cook!' I do like to share recipes that I know work for me. They are not necessarily of my invention – but I will always give you the origin and maybe the story behind them! These recipes are relatively easy to make – hence the title, Faff-Free Cooking.

So today's treat is …. Banana and Blueberry Muffins


225g plain flour
2 tsps baking powder
Pinch of salt
100g caster sugar
1 egg
125g plain yoghurt
125 ml milk
75g melted and cooled margarine
75g punnet of blueberries
2 mashed ripe bananas

1, Pre heat oven to 180C/gas 4 and place 12 paper muffin cases into a muffin tray.
2, In a large bowl, put the flour, baking powder, salt and sugar and mix lightly to combine.
3, Mix the egg, yoghurt, milk and melted and cooled margarine together in a jug. Pour this into the dry ingredients and mix lightly. Don't over mix or the muffins will be too dense in texture.
4, Add the blueberries and mashed banana and stir lightly through the mixture.
5, Spoon the mixture into the paper cases and bake for 30 mins until lightly golden brown.
6, Place on a wire rack to cool.
