My motto has always
been ‘never trust a skinny cook!' I do like to share recipes that I
know work for me. They are not necessarily of my invention – but I
will always give you the origin and maybe the story behind them!
These recipes are relatively easy to make – hence the title,
Faff-Free Cooking
So this month’s treat
is – Banana Cake!
Ingredients
Cake
125g butter or
margarine
125g caster sugar
50g light soft brown
sugar
3 medium bananas -
mashed
2 beaten eggs
175g self raising flour
Buttercream Filling
150g icing sugar
75g butter
Vanilla extract
Few drops of lemon
juice
1, In a large bowl,
cream butter or margarine, caster and light soft brown sugar, until
fluffy.
2, Gradually beat in
eggs
3, Mix in the mashed
banana and flour gently into the batter
4, Grease a 1kg/2lb
loaf tin.
5, Bake at Gas
4/350F/180C for 45 – 50 mins until risen and golden.
6, Remove from the tin
and allow to cool completely on a wire rack – then cut in half
lengthways.
7, To make the
buttercream – work together the icing sugar, butter, vanilla and
lemon juice with a wooden spoon to make a soft paste and then
sandwich the two halves of the cake together with the buttercream.
Scoff and
enjoy – Bananas!
