Tuesday Recipe Spot – Orange Polenta Cake (Gluten free) -Faff-Free Cooking with Jackie Johnson
My motto has always been ‘never trust a skinny cook!' I do like to share recipes that I know work for me. They are not necessarily of my invention – but I will always give you the origin and maybe the story behind them! These recipes are relatively easy to make – hence the title, Faff-Free Cooking
So todays treat is …. Orange Polenta Cake – a Greek style, gluten free cake
225g ground almonds
125g fine polenta
225g butter or margarine
1 tsp baking powder
200g caster sugar (golden is nice)
Grated zest from 2 big oranges
150ml juice from the 2 oranges
50g caster sugar
Preheat the oven to 170C/Gas3 and grease and bottom line an 8 inch loose bottomed high sided tin. This is a ‘tall’ cake!
In a mixing bowl, put the ground almonds, fine polenta and baking powder together and mix well.
Beat the butter or margarine until soft and then add the sugar and orange zest. Beat until light and fluffy. Add the eggs one at a time as you are beating the mixture.
Fold in the polenta and flour mix and spoon the mixture in the tin.
Bake for 50 mins until golden and springy to the touch. Leave in the tin.
Just before the cake comes out of the oven, make the syrup by heating the orange juice with the sugar until the sugar dissolves and simmer for a couple of mins.
Prick the top of the cake with a skewer and pour the syrup over the cake. It will soak it all up! Leave in the tin to cool.When cool, turn out onto a plate.
