Tuesday Recipe Spot – Coffee & Walnut Cupcakes- Faff-Free Cooking with Jackie Johnson
My motto has always been ‘never trust a skinny cook!' I do like to share recipes that I know work for me. They are not necessarily of my invention – but I will always give you the origin and maybe the story behind them! These recipes are relatively easy to make – hence the title, Faff-Free Cooking.
So today’s treat is - Coffee & Walnut Cupcakes
125g butter or margarine
125g caster sugar
2 large eggs
125g self raising flour
75g chopped walnuts
Cold strong coffee
Whole walnuts or coffee beans to decorate
150g icing sugar
A little of the strong coffee
Pre heat your oven to 190C/gas 5 and put eight paper muffin cases on a tray.
Beat the butter or margarine and sugar until light and fluffy.
Beat the eggs in one at a time with a tablespoon of flour to prevent curdling. Add three tablespoons of the cold strong coffee.
Add the chopped walnuts and fold in the flour. Fill the paper cases 3/4s full with the mixture and bake for 25 mins until golden and springy to the touch.
Allow the cakes to cool and make the icing by beating together the icing sugar and butter and adding two tablespoons of the coffee. Allow to firm up for ½ hour in the fridge.
With a flat/pallet knife swirl the icing over the cold cupcakes and decorate with whole walnuts or coffee beans.
