Tuesday Recipe Spot – Lemon Curd Muffins - Faff-Free Cooking with Jackie Johnson


My motto has always been 'Never trust a skinny cook!' I do like to share recipes that I know work for me. They are not necessarily of my invention – but I will always give you the origin and maybe the story behind them! These recipes are relatively easy to make – hence the title, Faff-Free Cooking.

So today's treat is …. Lemon Curd Muffins – light and fluffy after all the Xmas richness

Ingredients

225g plain flour

2 tsps baking powder

pinch of salt

100g caster sugar

1 egg

125g plain yoghurt

125 ml milk

75g melted and cooled margarine

175g lemon curd


1, Pre heat oven to 180C/gas 4 and place 12 paper muffin cases into a muffin tray.

2, In a large bowl, put the flour, baking powder, salt and sugar and mix lightly to combine.

3, Mix the egg, yoghurt, milk and melted and cooled margarine together in a jug. Pour this into the dry ingredients and mix lightly. Don't over mix or the muffins will be too dense in texture.

4, Add the lemon curd and stir lightly through the mixture.

5, Spoon the mixture into the paper cases and bake for 30 mins until lightly golden brown.

6, Place on a wire rack to cool.
