Tuesday Recipe Spot – Coconut and Cherry Cake - Faff-Free Cooking with Jackie Johnson
My motto has always been 'Never trust a skinny cook!' I do like to share recipes that I know work for me. They are not necessarily of my invention – but I will always give you the origin and maybe the story behind them! These recipes are relatively easy to make – hence the title, Faff-Free Cooking.
So today's treat is …. Coconut and Cherry Cake.....Cherrytastic!
175g butter or margarine
175g caster sugar
75g desiccated coconut (save a bit to sprinkle on top)
175g chopped glace cherries (save a whole few to put on top)
3 beaten eggs
115g self raising flour
splash of milk
1, Cream butter or margarine, caster sugar until fluffy.
2, Gradually beat in eggs and milk with a tablespoon of the flour to prevent the mixture curdling.
3, Stir in the chopped glace cherries and desiccated coconut.
4, Fold in the flour gently.
5, Grease a 2lb/1 ltr loaf tin and line the base with baking parchment or greaseproof paper. Sprinkle some coconut on top.
6, Bake in a pre heated oven at Gas 4/180C for 30 mins – then, place some whole cherries on top of the cake in a line and cook for a further 15 mins until risen and golden.
