Tuesday Recipe Spot – Faff-Free Cooking with Jackie Johnson
My motto has always been 'Never trust a skinny cook!' I do like to share recipes that I know work for me. They are not necessarily of my invention – but I will always give you the origin and maybe the story behind them! These recipes are relatively easy to make – hence the title, Faff-Free Cooking. I have given quantities in ounces as well for those of you who still like to know stuff 'in old money!'
So today's treat is …. Easy Christmas Biscuits – spicy and nice
225g/8oz self raising flour
115g/4oz caster sugar (Golden would be nice)
115g/4oz butter cut into small pieces
1 egg – beaten
½ tsp each of ground cinnamon, ginger and mixed spice
1, In a large bowl mix together the flour, sugar and spices.
2, Add the butter and rub in with your fingers so the mix looks breadcrumbs
3, Add the beaten egg and mix into a dough, knead lightly and place in cling film in the fridge for 30 mins. It will roll out a lot easier if you do this.
4, Roll out onto a floured surface and cut into festive shapes. You can do this freehand but cookie cutters are easier to use.
5, Place onto baking trays that have been lightly greased and bake in a pre heated oven at 170C/gas 4 for about 15 mins until golden brown.
6, Leave to cool on a wire rack and decorate with a dusting of icing sugar, coloured icing pens – I used edible glitter on mine in the picture.
