Tuesday Recipe Spot – Faff-Free Cooking with Jackie Johnson

My motto has always been 'Never trust a skinny cook!' I do like to share recipes that I know work for me. They are not necessarily of my invention – but I will always give you the origin and maybe the story behind them! These recipes are relatively easy to make – hence the title, Faff-Free Cooking.'

So today's treat is …. Golden Syrup Cuddle Cake – the cake that gives you a big warm hug!


100g butter or margarine

250g Golden Syrup

150g self raising flour

50g fresh white breadcrumbs

grated zest of 1 lemon

1 egg

150ml plain yoghurt

½ tsp bicarbonate of soda

½ tsp salt

1, Put the butter or margarine and 200g of the Golden Syrup in a small saucepan and melt together gently and leave to cool. Pre heat your oven to 180C/gas 4 and grease a 2lb loaf tin and line the base with baking parchment.

2, In a large mixing bowl sift the flour, bicarbonate of soda and salt.

3, Add the breadcrumbs and lemon zest and mix well together.

4, in a separate bowl, beat the egg and mix in the yoghurt. Pour into the dry ingredients and add the cooled syrup and butter or margarine mixture.

5, Beat well with a wooden spoon or a hand held mixer on medium speed until well combined. The mixture will be quite loose and look a bit like porridge!

6, Pour the mixture in the tin and bake for about 40mins. The cake will rise and be golden and springy to the touch when done.

7, Just before the cake is done, mix the remaining 50g of Golden Syrup with a tablespoon of hot water.

8, Take the cake out of the oven and with a skewer or cocktail stick prick the surface all over, nearly through to the bottom. Then pour the warm syrup over the cake and leave to cool in the tin.

You can also serve this cake warm with a bit of custard too!
