Tea Time Treat!

Vegetable Frittata


3 tablespoons olive oil

2 onions, very finely sliced

3 courgettes, finely sliced

3 tomatoes, skinned and chopped

6 large eggs

50 g (2 oz) Parmesan cheese, freshly grated

few basil leaves, torn

1 tablespoon chopped parsley

25 g (1 oz)

salt and pepper

Tune in at 6:45pm to hear how you put it all together!
