Here is the recipe for Jonny's Vegetable Frittatas to follow up the ingredients posted earlier:
1. Heat the oil in a large frying pan. Add the onions and saute gently for 8-10 minutes until nice and soft and golden brown. Add the courgetts and continue cooking until brown onboth sides. Add the tomatoes and cook on a moderate heat until thick.
2. Break the eggs into a large bowl and add the seasoning, grated Parmesan, torn basil and parsley. Beat well with a whisk until thoroughly blended.
3. Drain off and discard any excess oil from the tomatoe mixture. Add the mixture to the beaten eggs and stir together gently until well mixed.
4. Heat the butter in a large clean frying pan until hot and sizzling. Pour in the egg mixture and reduce the heat to a bare simmer. Cook very gently until the omlette is firm and set underneath. Place under a preheated gril for a few seconds to set and brown the top. Slide out onto a plate and serve at room temperature cut into wedges.
