Cod kebabs with barbecue sauce
750g [1 1/2 lb ] cod steaks , skinned boned and cut into cubes
12 rosemary spriggs
12/16 button mushrooms , wiped and stalks removed
2 teaspoons prepared mustard
4 teaspoons Worcestershire sauce
4 tablespoons red wine vinegar
4 tablespoons olive or sunflower oil
4 tablespoons tomato ketchup
Serves 4 - preparation time 15 minutes plus marinating
cooking time 5 minutes
place the pieces in a glass or earthenware dish.Combine the marinade ingredients , pour over the cod and leave for 20 minutes turning occasionally.
Oil 4 kebab skewers and thread on the pieces of cod, interspersed with the rosemary sprigs and mushrooms.
Place the kebabs under a preheated grill for about 5 minutes, turning and basting with the marinade. Serve immediately with a crisp green salad and pour remaining marinade over the kebabs.
